Fraternal greetings from England, to the far away land of salt-water tea...
Good left-over turkey recipe:
1 Pack of frozen puff pastry (defrosted and unrolled)
1 small pack of sage and onion stuffing- pre-cooked and allowed to cool.
Assorted leftover sausages and also cranberries.
Now you take the pastry and lie it flat. Then add the slices of leftover turkey along the centre, and on top of that the sausages, then the stuffing.
Then bring the rest of the pastry over the top, like packing a parcel, and seal it up. Score the top, and brush with a small beaten egg so it goes nice and brown. Bake in a hot oven (Regulo 6) until golden and crisp.
That one also works as well with leftover roast pork.
Another nice recipe for parties, is cheese and onion pinwheels. You take a sheet of defrosted puff pastry, and spread it with beef extract (OXO or BOVRIL in England) made into a paste. Not too watery.
Then you sprinkle that with grated cheese and finely chopped onion, and start rolling the pastry into a kind of swiss roll. If any beef extract paste is left, brush it onto the outside of the pastry roll.
Then cut through the roll to make pinwheels, and lie them on a baking tray. Bake at regulo 6 until nice and crispy. Best eaten hot, but prior to eating throw diet sheet into the trash.
Thanksgiving weekend is important to this Englishwoman for two reasons:
1. I personally give thanks for all my friends in the USA.
2. I make my Christmas cake this weekend. I have already set aside the eggs, and the butter, to get up to room temperature before the big push, tomorrow morning.
Sounds like another winner! Is the Christmas cake the type with the fruit in it? I'm not so crazy about those:>( The pinwheels sound like they're up my alley though!
Yes Eyes, the Christmas cake has currants, raisins, sultanas, glace cheeries, ground mixed spice and cinnamon. You can either decorate the top with marzipan and then Royal Icing, or you can cover it with a layer of pecans prior to baking. Also it benefits from being laced with brandy or sherry. Mr Monty loves his Christmas cake. He keeps gazing at the oven door while it is in there.....

Well now that sounds pretty good (minus the raisons). It sounds like Mr Monty is a happy man!
